Fennel, Apple, Cabbage, Beet & Ginger Salad

Ingredients

1 Bulb of fennel thinly sliced

1 Raw beetroot coarsely grated

1 green apple sliced into thin batons

1 very small baby red cabbage, thinly sliced

1 large carrot finely diced

1 large or 3 mini red peppers diced

2 sticks of celery finely chopped

Thumb of ginger grated

Large handful of parsely, mint and chives finely chopped

Toasted cashew nuts


Dress with lots of lemon juice, olive oil and S&P


Directions

Mix all the salad ingredients together. Dress well and check seasoning.

Top with toasted cashew nuts
